Ingredients
  

  • For the Broth
  • 4 cups vegetable broth
  • 4 dried shiitake mushrooms
  • 2 tablespoons soy sauce
  • 1 tablespoon white miso
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 2 cloves garlic minced
  • For the Noodles
  • 8 oz dry ramen noodles or fresh noodles
  • Vegetables & Toppings
  • 1 cup baby spinach
  • 1 cup sliced mushrooms shiitake or cremini
  • 1 soft boiled egg optional
  • 1 cup sliced green onions
  • 1 small carrot julienned
  • Toasted sesame seeds

Instructions
 

  • Make the Broth (10 minutes)
  • In a medium pot, heat sesame oil over medium heat.
  • Add minced garlic and ginger. Cook for 1 minute until fragrant.
  • Pour in the vegetable broth and add dried shiitake mushrooms.
  • Bring to a gentle simmer.
  • Stir in soy sauce and white miso until dissolved.
  • The smell will tell you when it’s ready — warm, savory, and comforting.
  • Cook the Noodles (3–5 minutes)
  • In a separate pot, bring boiling water to a boil.
  • Add dry ramen noodles or fresh noodles.
  • Cook until tender, usually 3–4 minutes.
  • Drain and set aside.
  • Try not to eat them yet — I always sneak a taste for “quality control.”
  • Sauté the Vegetables (3–4 minutes)
  • In a skillet, sauté sliced mushrooms until golden.
  • Add baby spinach and stir until wilted.
  • Remove from heat.
  • Assemble the Ramen Bowls (2–3 minutes)
  • Place cooked noodles into each bowl.
  • Ladle hot broth over the noodles.
  • Top with sautéed mushrooms, spinach, carrots, and green onions.
  • Add a soft boiled egg if using.
  • Sprinkle toasted sesame seeds on top.
  • Serve Hot
  • Enjoy immediately! Ramen is best when the noodles are silky and the broth is steaming.

Notes

  • Cook noodles separately to keep the broth clear and silky.
  • Use dried shiitake mushrooms for the deepest ramen-style umami flavor.
  • Add white miso gently at the end — avoid boiling to preserve flavor and prevent graininess.
  • Store broth, noodles, and vegetables separately for the best leftovers.
  • For a vegan ramen version, omit the soft boiled egg and replace with tofu or tempeh.
  • Taste and adjust seasonings — soy sauce varies in saltiness.
  • Add toppings right before serving to keep colors and textures vibrant.
