Make the Broth (10 minutes)
In a medium pot, heat sesame oil over medium heat.
Add minced garlic and ginger. Cook for 1 minute until fragrant.
Pour in the vegetable broth and add dried shiitake mushrooms.
Bring to a gentle simmer.
Stir in soy sauce and white miso until dissolved.
The smell will tell you when it’s ready — warm, savory, and comforting.
Cook the Noodles (3–5 minutes)
In a separate pot, bring boiling water to a boil.
Add dry ramen noodles or fresh noodles.
Cook until tender, usually 3–4 minutes.
Drain and set aside.
Try not to eat them yet — I always sneak a taste for “quality control.”
Sauté the Vegetables (3–4 minutes)
In a skillet, sauté sliced mushrooms until golden.
Add baby spinach and stir until wilted.
Remove from heat.
Assemble the Ramen Bowls (2–3 minutes)
Place cooked noodles into each bowl.
Ladle hot broth over the noodles.
Top with sautéed mushrooms, spinach, carrots, and green onions.
Add a soft boiled egg if using.
Sprinkle toasted sesame seeds on top.
Serve Hot
Enjoy immediately! Ramen is best when the noodles are silky and the broth is steaming.
