  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 5 garlic cloves minced
  • 1/2 tsp red pepper flakes optional, for heat
  • 1/3 cup dry white wine like Sauvignon Blanc
  • Juice of 1 fresh lemon about 2 tbsp
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste
  • To Serve:
  • Cooked angel hair pasta rice, or toasted crusty bread
  • Lemon wedges for garnish
  • Grated parmesan optional

Method
 

  1. Prep the Pasta (if using): Start by cooking your angel hair pasta in salted boiling water according to package directions. Drain and set aside.
  2. Sauté Garlic: In a large skillet, heat butter and olive oil over medium heat. Add minced garlic and red pepper flakes. Sauté for 30 seconds to 1 minute, just until fragrant—don’t let it brown!
  3. Cook Shrimp: Add shrimp in a single layer. Season with salt and pepper. Cook for 2–3 minutes per side until shrimp turn pink and are cooked through.
  4. Deglaze with Wine: Pour in white wine and lemon juice. Let simmer for 1–2 minutes to reduce slightly and let the flavors marry.
  5. Finish with Fresh Herbs: Stir in chopped parsley and adjust seasoning if needed.
  6. Serve: Toss with cooked pasta or spoon over toasted bread. Garnish with extra lemon juice and parmesan if desired.

Notes

  • Don’t Overcook Shrimp: Shrimp cook fast—remove them from heat once they’re opaque and pink.
  • Use High-Quality Wine: If you wouldn’t drink it, don’t cook with it.
  • Layer Flavors: Sauté garlic gently and finish with fresh herbs and citrus for balance.
  • Use Fresh Lemon Juice: Bottled just doesn’t have the same zing.
