  • cups all-purpose flour – Spoon and level for accuracy; too much can make muffins dense.

  • ½ teaspoon salt – Balances the sweetness and enhances flavor.
  • 2 teaspoons pumpkin pie spice – You can make your own with cinnamon nutmeg, ginger, and cloves.
  • Wet Ingredients
  • 1 cup pumpkin purée not pumpkin pie filling – The star of the show!
  • 2 large eggs – At room temperature for better texture.
  • ½ cup brown sugar – Adds moisture and deep caramel notes.
  • ¼ cup granulated sugar – For sweetness and structure.
  • ½ cup melted butter – Unsalted; coconut oil works too if you prefer dairy-free.
  • 1 teaspoon vanilla extract – Rounds out all the flavors.

  • ½ cup chocolate chips – For a dessert-style muffin.
  • ½ cup chopped pecans or walnuts – For crunch and a nutty twist.

Instructions
 

  • Prep Your Muffin Pan
  • Preheat your oven to 350°F (177°C). Line a 12-cup muffin tin with paper liners or grease lightly with nonstick spray.
  • Mix the Wet Ingredients
  • In a large bowl, whisk together pumpkin purée, eggs, brown sugar, granulated sugar, melted butter, and vanilla extract until smooth and well combined. The batter should look glossy and thick, with that signature pumpkin color.
  • Combine Dry Ingredients
  • Add flour, baking powder, baking soda, salt, and pumpkin pie spice directly to the bowl with the wet ingredients. Gently fold until just combined — don’t overmix or your muffins might turn dense.
  • If you’re adding chocolate chips or nuts, fold them in now.
  • Fill and Bake
  • Divide the batter evenly among the muffin cups, filling each about ¾ full.
  • Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool and Enjoy
  • Let the muffins cool in the pan for 5 minutes, then transfer them to a rack to cool completely.
  • Try not to eat them all warm out of the oven — but honestly, no judgment if you do.

Notes

  • Don’t overmix! A few streaks of flour are fine — overmixing leads to tough muffins.
  • Use room temperature eggs. Cold eggs can cause the butter to solidify, affecting texture.
  • Check for doneness early. Every oven runs differently; start checking at the 18-minute mark.
  • Customize your sweetness. Use dark brown sugar for richer flavor or light brown sugar for mild sweetness.
  • Let them rest. Muffins actually taste better after they’ve cooled for 30 minutes — the spices deepen beautifully.
  • Storage: Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5.
  • Freezing Tip: Freeze for up to 2 months; reheat in the microwave for 10–15 seconds for that “freshly baked” feel.
