- For the Popcorn Base
- 10 cups popped popcorn about 1/2 cup unpopped kernels, remove unpopped kernels
- Cooking spray for greasing bowl and utensils
- For the Syrup Mixture
- 1 cup sugar
- 1 cup light corn syrup
- 1/4 cup unsalted butter
- 1/2 tsp salt
- 1 tsp vanilla extract
- Optional Add-Ins
- 1 cup mini marshmallows for marshmallow popcorn balls
- Sprinkles candies, or chocolate chips (press them in once the mixture cools slightly)
Pop the popcorn. Use an air popper, stovetop, or microwave. Measure about 10 cups, then transfer to a large greased mixing bowl. Pick out unpopped kernels.
Make the syrup. In a saucepan, combine sugar, corn syrup, butter, and salt. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
Heat, stirring. Continue cooking for 2–3 minutes until the mixture reaches 235–240°F (soft-ball stage). If using marshmallows, stir them in now until melted.
Pour over popcorn. Carefully drizzle the hot syrup mixture over the popcorn while gently stirring with a greased wooden spoon.
Cool slightly. Let it sit for 2–3 minutes so it’s cool enough to handle, but still sticky.
Form the balls. Spray your hands with cooking spray, then scoop and press the popcorn mixture into balls about the size of a baseball.
Set & serve. Place on wax paper to cool completely. Wrap individually in plastic wrap if storing or gifting.
