  • 6 cups fresh peaches or frozen, thawed, peeled and sliced
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg optional
  • 2 teaspoons cornstarch
  • For the Topping:
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1/2 teaspoon vanilla extract
  • Optional for Serving:
  • Scoop of vanilla ice cream or whipped cream

Method
 

  1. Prep the Peaches: Preheat oven to 350 degrees F. In a large bowl, combine peaches, brown sugar, white sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Toss to coat.
  2. Prepare the Baking Dish: Pour the peach mixture into a lightly greased 9x13-inch baking dish. Spread evenly.
  3. Make the Topping: In another bowl, mix flour, sugar, baking powder, and salt. Stir in milk, melted butter, and vanilla until a thick batter forms.
  4. Assemble: Spoon the batter evenly over the peach mixture. It won’t cover completely but will spread as it bakes.
  5. Bake: Place the dish in the oven and bake for 40-45 minutes, or until the topping is golden brown and peaches are bubbling.
  6. Cool and Serve: Let cool for 10-15 minutes before serving. Top with a scoop of vanilla ice cream for the ultimate finish.

Notes

  • If using canned peaches, drain them well and reduce sugar slightly.
  • Don’t skip the cornstarch—it thickens the filling.
  • Ripe peaches provide the best flavor.
