Ingredients
  

  • Fresh & Veggies:
  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin seeds
  • 1 medium onion finely chopped
  • 1 green bell pepper finely chopped
  • 1–2 green chilies sliced (adjust for spice)
  • 1 teaspoon minced ginger garlic paste
  • 2 medium tomatoes chopped
  • Spices & Paneer:
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chili powder or to taste
  • 1 teaspoon coriander powder
  • ½ teaspoon pav bhaji masala optional, but adds depth
  • Salt to taste
  • 250 g about 9 oz crumbled paneer (fresh or store‑bought)
  • Garnish & Finish:
  • Chopped cilantro for garnish
  • Lemon juice a squeeze at the end

Instructions
 

  • Heat Oil & Toast Cumin (2 minutes)
  • Heat oil or ghee in a skillet over medium‑high heat. Add cumin seeds and let them sizzle until fragrant (about 30 seconds).
  • Sauté Onions & Peppers (3 minutes)
  • Add chopped onion, green bell pepper, and green chilies. Cook for 3–4 minutes until onions soften and peppers start to shrink.
  • Add Ginger-Garlic & Tomatoes (2 minutes)
  • Stir in ginger-garlic paste and cook for 30 seconds. Then add tomatoes and sauté until they turn pulpy—about 2 minutes.
  • Add Spices (1 minute)
  • Sprinkle in turmeric, coriander powder, red chili powder, pav bhaji masala (if using), and salt. Stir well and simmer for a minute.
  • Add Crumbled Paneer (3 minutes)
  • Reduce heat to medium, stir in crumbled paneer, and toss gently to coat evenly in the spice mix. Cook for 2–3 minutes until heated through.
  • Garnish & Serve (1 minute)
  • Turn off the heat. Squeeze in lemon juice, garnish with chopped cilantro, and serve hot alongside roti, pav, or toasted sandwich bread.
