Ingredients
  

  • 1 cup 2 sticks unsalted butter, room temperature
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 1/2 cups raisins

Instructions
 

  • Preheat the Oven
  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • Cream the Butter and Sugars
  • In a stand mixer or large bowl with a hand mixer, cream together the butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
  • Add Eggs and Vanilla
  • Beat in the eggs, one at a time, then mix in the vanilla extract.
  • Mix the Dry Ingredients
  • In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  • Combine Wet and Dry
  • Gradually add the dry ingredients to the wet mixture and stir just until combined.
  • Add the Oats and Raisins
  • Fold in the oats and raisins until evenly distributed.
  • Scoop and Bake
  • Drop dough into balls (about 2 tablespoons each) on the lined baking sheets, spacing 2 inches apart.
  • Bake to Perfection
  • Bake for 10–12 minutes or until the edges are golden brown but the centers still look slightly underdone.
  • Cool and Enjoy
  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
