Prepare Your Baking Area

Make the Chocolate Base

Stir constantly as the butter melts and everything combines into a glossy chocolate mixture. Bring it to a rolling boil (meaning consistent bubbling across the surface) and let it boil for exactly 60 seconds — not longer.
Add Flavor
Remove the pan from heat immediately. Stir in the creamy peanut butter, vanilla extract, and salt until smooth and fully incorporated. The mixture should smell heavenly — like chocolate fudge meets peanut butter heaven.
Add the Oats
Stir in the quick cooking oats until the mixture is evenly coated. It’ll look thick and glossy.
If you’re using old-fashioned oats, add an extra tablespoon of milk or let the mixture rest 1–2 minutes before scooping — this helps soften them.
Shape the Cookies
Use a tablespoon or cookie scoop to drop spoonfuls of the mixture onto your prepared baking sheets.
You can leave them rustic and lumpy (classic style!) or gently flatten them with the back of a spoon for a smoother look.
Let Them Set
Let the cookies sit at room temperature for about 20–30 minutes or until firm to the touch.
If you’re impatient (like me), you can pop them in the fridge for 15 minutes to speed things up.
