- 2 New York strip steaks about 1–1.25 inches thick
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper

- 2 sprigs fresh thyme or rosemary

Bring Steaks to Room Temperature
