- For the Rice
- 3 cups cooked white rice short-grain or medium-grain preferred; start cooking rice first so it’s ready
- For the Beef Patties
- 1 pound ground chuck or ground beef 80/20 blend works best for juiciness
- 1 teaspoon salt and pepper divided
- ½ teaspoon garlic powder
- 1 tablespoon soy sauce
- 1 teaspoon Worcestershire sauce
- For the Mushroom Gravy
- 2 tablespoons unsalted butter
- 1 sweet onion finely diced
- 1 cup sliced mushrooms button or cremini
- 2 tablespoons all-purpose flour
- 2 cups beef stock
- 1 tablespoon soy sauce
- ½ teaspoon Worcestershire sauce
- Salt and pepper to taste
- For the Eggs & Garnish
- 4 large eggs fried sunny side or over easy — yolk should be runny!
- 2 tablespoons butter or oil for frying eggs
- Sliced green onions for garnish
Cook the rice. Start by cooking rice according to package directions. Keep warm.
Form the patties. In a large bowl, combine ground chuck, garlic powder, soy sauce, Worcestershire sauce, salt, and pepper. Mix gently (don’t overwork) and form into 4 hamburger patties.
Cook the patties. Heat a skillet over medium heat with a drizzle of oil. Cook patties for 4–5 minutes per side (minutes per side may vary with thickness), until browned and cooked through. Transfer to a plate and keep warm.
Make the gravy. In the same pan, melt butter. Add diced onion and mushrooms, cooking until softened and golden. Sprinkle in flour and stir for 1 minute. Slowly whisk in beef stock, then add soy sauce and Worcestershire. Simmer until thickened (5–7 minutes). Season with salt and pepper.
Fry the eggs. In a separate pan, melt butter over medium heat. Crack in eggs and cook sunny side up or over easy until whites are set but yolks remain runny.
Assemble. Scoop a generous serving of rice onto each plate. Place a beef patty on top, ladle mushroom gravy generously, and crown with a fried egg.
Garnish. Sprinkle with sliced green onions and serve hot.
