Ingredients
  

  • For the Sandwich:
  • 4 hoagie rolls crusty on the outside, soft inside
  • ½ lb Genoa salami thinly sliced
  • ½ lb ham thinly sliced
  • ½ lb capicola or mortadella thinly sliced
  • ½ lb provolone cheese thinly sliced
  • 1 cup shredded iceberg lettuce
  • 1 large tomato thinly sliced
  • ½ small red onion thinly sliced
  • ¼ cup sliced banana peppers or cherry peppers optional
  • For the Dressing:
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • ½ tsp dried oregano
  • Salt and pepper to taste

Instructions
 

  • Prepare the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  • Slice the rolls: Split the hoagie rolls lengthwise without cutting all the way through.
  • Layer the meats: Start with a layer of ham, then salami, then capicola.
  • Add the cheese: Place provolone slices over the meats.
  • Pile on the veggies: Add shredded lettuce, tomato slices, onion, and peppers.
  • Drizzle the dressing: Spoon the vinegar mixture evenly over the veggies.
  • Close and press: Fold the top of the roll over and gently press down.
  • Serve or wrap: Cut in half, wrap in parchment, and serve immediately or refrigerate for later.

Notes

  • Don’t overfill. Too much filling makes it hard to eat and wrap.
  • Use fresh rolls. The bread is just as important as the filling.
  • Balance flavors. Use tangy veggies to cut through the richness of the meats and cheese.
