Ingredients

  • For the Crab Cake Mixture:
  • 1 pound jumbo lump crab meat shells removed (check for stray bits)
  • 2 large eggs beaten
  • ¼ cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons Old Bay seasoning or bay seasoning
  • 2 tablespoons fresh parsley finely chopped
  • ½ cup plain breadcrumbs or panko
  • For Cooking:
  • 2 tablespoons olive oil or unsalted butter
  • Lemon wedges and tartar sauce for serving

Instructions

  • Mix the crab cake base (5 min)
  • In a large bowl, gently fold crab meat, beaten eggs, mayonnaise, mustard, Worcestershire sauce, Old Bay seasoning, parsley, and breadcrumbs. Don’t overmix—keep those lumps intact.
  • Form the cakes (5 min)
  • Divide mixture into 8 equal portions and shape into patties about ¾‑inch thick. Chill in fridge for 10 minutes to help them hold together.
  • Pan‑fry (traditional)
  • Heat olive oil or butter in a nonstick skillet over medium‑high heat. Add crab cakes and cook about 3–4 minutes per side, until golden brown and crisp.
  • Or bake instead
  • Preheat oven to 400°F. Place cakes on a baking sheet lined with parchment or lightly greased. Bake for 18–20 minutes, turning once halfway, until golden.
  • Serve with lemon wedges and tartar sauce, and enjoy immediately while crispy.

Notes

  • Mini tip: Handle the crab gently—many lumps are fragile and you want them intact for best texture.
  • Expert Tips:
    • Keep the crab mixture cold—it makes shaping easier and prevents breakage.
    • Use fresh parsley and Old Bay for bright, classic flavor.
    • Don’t overcrowd the pan—space ensures crispy edges.
  • Mistakes to Avoid:
    • Overmixing the crab can turn it into mushy lumps.
    • Using imitation crab or low quality crab—it ruins texture and flavor.
    • Cooking over too low heat—it yields soggy, greasy cakes.
    • Not chilling the patties first—they may fall apart when flipping.
