Prep the Shrimp (5 minutes):
If using frozen shrimp, thaw completely by running under cold water for a few minutes.
Pat dry with paper towels. Season lightly with salt and pepper.
Cook the Shrimp (5–6 minutes):
Heat 1 tablespoon oil in a large skillet over medium-high heat.
Add shrimp in a single layer, cooking 2–3 minutes per side until pink and opaque.
Remove shrimp and set aside.
Make the Creamy Coconut Sauce (10 minutes):
In the same skillet, add onion and garlic; sauté until fragrant (about 2 minutes).
Pour in coconut milk and coconut cream, stirring to combine.
Add soy sauce, lime zest, lime juice, and red pepper flakes.
Simmer for 5–6 minutes, stirring occasionally, until the sauce thickens slightly.
Combine and Finish (5 minutes):
Return shrimp to the skillet, tossing gently to coat in the sauce.
Let simmer for 2–3 minutes to absorb flavors.
Taste and adjust seasoning with salt and black pepper.
Serve and Garnish:
Plate over rice or alongside crusty bread.
Garnish with fresh parsley or cilantro and a wedge of lime.
