There you have it — my tried-and-true chuck roast crock pot recipe. It’s slow cooked to perfection, with tender and juicy beef, flavorful vegetables, and a rich, savory gravy that feels like a warm hug in a bowl.

Ingredients
  

  • For the Roast
  • 3–4 lb beef chuck roast crock pot chuck roast or rump roast works too
  • 2 tablespoons olive oil for searing
  • 1 packet dry onion soup mix adds instant flavor depth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
  • For the Sauce
  • 2 cups beef broth low sodium if you prefer
  • 1 cup red wine optional, but adds rich flavor; sub with more broth if you like
  • 2 tablespoons Worcestershire sauce
  • Vegetables
  • 4 large carrots cut into chunks
  • 4–5 medium potatoes Yukon gold or red, cut into halves or quarters
  • 1 large onion sliced into thick wedges
  • 2–3 sprigs fresh thyme and rosemary or 1 teaspoon each dried
  • To Thicken Optional
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water for a cornstarch slurry to thicken the gravy

Instructions
 

  • Sear the Meat
  • Heat olive oil in a large skillet over high heat. Pat the chuck roast dry with paper towels, then season with salt, pepper, garlic powder, and onion powder. Sear the meat on all sides until browned (about 2–3 minutes per side). This locks in flavor and creates that golden crust.
  • Prepare the Crockpot
  • Place the carrots, potatoes, and onions at the bottom of the slow cooker. Lay the seared chuck roast on top.
  • Mix the Sauce
  • In a bowl, combine beef broth, red wine, Worcestershire sauce, and the dry onion soup mix. Pour over the roast and vegetables. Add fresh thyme and rosemary on top.
  • Slow Cook
  • Cover with the lid and cook on Low heat for 8–10 hours (recommended for tender results) or on High heat for 4–5 hours if you’re short on time. The roast should be fork-tender when done.
  • Make the Gravy (Optional)
  • Remove the roast and vegetables to a platter. Pour the cooking liquid into a saucepan. Simmer on medium heat. Stir in the cornstarch slurry and cook until the gravy thickens, about 2–3 minutes.
  • Serve
  • Shred or slice the beef, serve with vegetables, and drizzle with the gravy. Don’t forget that first taste-test spoonful — chef’s privilege!

Notes

  • Don’t skip searing the meat – It adds a huge boost of flavor.
  • Layer vegetables underneath – Keeps them moist without turning to mush.
  • Low and slow wins – High heat works, but the best texture comes from cooking on Low.
  • Don’t overdo the veggies – Cut them big so they don’t disintegrate.
  • Taste your gravy – Adjust salt and pepper at the end; broth and soup mix can vary in saltiness.
  • Refrigerate leftovers for up to 4 days. While technically freezer safe, I don’t recommend freezing with potatoes as they get grainy.
