Ingredients

  • Dry Ingredients
  • 1 ¾ cups all-purpose flour – Gives structure without heaviness.
  • ¾ cup unsweetened cocoa powder – Use natural cocoa powder for classic flavor or Dutch process cocoa powder for deeper color.
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt – Balances the sweetness and enhances the chocolate.
  • Wet Ingredients
  • 2 cups granulated sugar – Sweetens and adds moisture.
  • 2 large eggs – Room temperature is best for even mixing.
  • 1 cup buttermilk – Adds tang and keeps the cake ultra moist.
  • ½ cup vegetable oil – Ensures a tender rich crumb.
  • 2 teaspoons pure vanilla extract – Always use real vanilla for depth of flavor.
  • 1 cup hot brewed coffee or hot water – Intensifies the chocolate flavor and makes the batter smooth.
  • For the Chocolate Frosting
  • 1 cup 2 sticks unsalted butter, softened
  • ¾ cup unsweetened cocoa powder
  • 3–4 cups powdered sugar sifted
  • ½ cup heavy cream or milk
  • 2 teaspoons vanilla extract
  • Pinch of salt

Instructions

  • Preheat and Prep
  • Preheat your oven to 350°F (175°C). Grease two 9-inch cake pans and line the bottoms with parchment paper. Lightly dust with cocoa powder instead of flour—it keeps the edges dark and pretty.
  • Mix Dry Ingredients
  • In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. This helps distribute the leavening evenly so your cake rises perfectly.
  • Combine Wet Ingredients
  • In a second bowl (or the bowl of a stand mixer), whisk together sugar, eggs, buttermilk, oil, and vanilla extract until smooth and slightly glossy.
  • Combine Wet and Dry
  • Pour the wet mixture into the dry ingredients and stir gently with a spatula or whisk until just combined. Don’t worry if it looks a little thick at this stage.
  • Add Hot Coffee
  • Slowly pour in the hot coffee while whisking. The batter will become thin and silky—don’t panic! That’s the secret to a moist chocolate cake with a tender crumb.
  • Bake
  • Divide the batter evenly between the two pans. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. The cakes should spring back lightly when touched.
  • Cool Completely
  • Let the cakes cool in the pans for 10 minutes, then remove them to a wire rack. Cool completely before frosting—trust me, frosting warm cake equals slippery disaster.
  • Make the Frosting
  • In a medium bowl, beat the butter until creamy (about 2 minutes). Add cocoa powder, powdered sugar, cream, vanilla, and a pinch of salt. Beat until light and fluffy, adding more cream as needed for a spreadable consistency.
  • Frost and Decorate
  • Place one cake layer on a stand or plate, frost the top, then add the second layer. Spread frosting evenly on top and sides. Swirl it, smooth it, or go rustic—it’s beautiful either way.

Notes

  • Don’t overmix the batter; it can make the cake tough.
  • Use room temperature ingredients for best texture.
  • Cool completely before frosting to prevent melting.
  • Bake on the middle rack for even results.
  • Wrap cooled cake layers tightly in plastic if frosting the next day.
  • Store leftovers at room temperature for 3 days or refrigerate for up to 5 days.
  • For freezing, wrap unfrosted layers and freeze for up to 3 months.
