  • 2 cans 15 oz each chickpeas, rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1/2 English cucumber diced
  • 1/3 cup red onion finely chopped
  • 1/2 cup red bell pepper chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup crumbled feta cheese optional
  • For the Lemon Dressing:
  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp Dijon mustard
  • 1 garlic clove minced
  • Salt and black pepper to taste

Method
 

  1. Prep your ingredients: Rinse and drain chickpeas. Chop all vegetables and herbs.
  2. Make the dressing: In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper.
  3. Toss the salad: In a large mixing bowl, combine chickpeas, tomatoes, cucumber, red onion, bell pepper, and parsley.
  4. Add dressing and mix: Pour dressing over the salad. Toss until everything is evenly coated.
  5. Top with feta (if using): Sprinkle on top before serving or stir gently to combine.
