- 2 teaspoons ginger garlic paste or 1 teaspoon each, minced
- 2 green chilies slit (optional for spice)

- 1 teaspoon cumin seeds
- 1 teaspoon cumin powder
- 1 1/2 teaspoons chili powder adjust to heat preference
- 1 teaspoon turmeric powder
- 1 1/2 teaspoons garam masala
- 1 teaspoon coriander powder
- 1–2 dried red chilies optional, for depth
- Salt to taste

Heat oil (2 minutes): In a deep skillet or saucepan, heat 2 tablespoons of oil over medium heat. Add cumin seeds and let them sizzle until fragrant.
Sauté onions (5 minutes): Add chopped onions and cook until golden brown, stirring often. This base adds sweetness.
Add ginger garlic (1 minute): Stir in ginger garlic paste and sauté until the raw smell disappears.
Add tomatoes (5 minutes): Toss in chopped tomatoes and cook until soft, stirring. You’ll see the oil separating from the mixture.
Add spices (2 minutes): Sprinkle in chili powder, turmeric, coriander powder, and cumin powder. Stir well to bloom the spices.
Add chickpeas (2 minutes): Stir in the cooked chickpeas until coated with the masala base.
Add water (20 minutes): Pour in 1 cup of water, reduce heat, and simmer for 15–20 minutes. Stir occasionally until the gravy thickens.
Finish with garam masala (1 minute): Stir in garam masala and simmer for another minute. Adjust salt.
Garnish and serve: Sprinkle with fresh cilantro and serve hot with basmati rice or naan.
