Trim and season the brisket point. Remove excess fat, leaving about ¼ inch. Pat dry, then coat with your dry rub: salt, pepper, paprika, garlic, onion powder, and brown sugar.
Preheat your smoker. Set to 225°F, using wood chunks (hickory or oak are my go-to).
Smoke the brisket point. Place it fat side up and let it smoke until the internal temperature reaches around 165°F (about 5–6 hours). The bark should be dark and firm.
Wrap for tenderness. Once it hits 165°F, wrap tightly in butcher paper or foil. Continue smoking until internal temperature reaches 195–200°F (another 2–3 hours). This is when the meat becomes tender.
Cube the brisket. Remove from the smoker, unwrap, and let rest for 20 minutes. Slice into 1-inch cubes.
Sauce and pan. Place cubes into an aluminum pan. Add BBQ sauce, beef broth, honey, and butter. Toss to coat.
Return to the smoker. Cook uncovered at 250°F for 1–2 hours, stirring occasionally, until the sauce thickens and the cubes caramelize.
Serve warm. The burnt ends should be glossy, tender, and sticky — true “meat candy.”
