Soak and blend the chiles (15 minutes):
Soak the guajillo, ancho, and árbol chiles in hot water until soft. Blend with tomato, onion, garlic, spices, vinegar, and 1 cup of broth until smooth.
Sear the meat (10 minutes):
In a large pot or Dutch oven, heat oil and sear the beef on all sides. This adds deep flavor to the stew.
Simmer the birria (2.5–3 hours):
Pour in the blended chile mixture and the rest of the broth. Toss in bay leaves. Cover and simmer on low until the meat is fork-tender and shreds easily.
Shortcut: Use a slow cooker (6–8 hours on low) or Instant Pot (45–50 minutes on high pressure, natural release) instead of stovetop.
Shred the meat (10 minutes):
Once cooked, remove the meat, shred it with forks, and return it to the pot to soak up that rich broth.
Assemble the tacos (20 minutes):
Dip each tortilla into the top layer of the birria broth (the fatty part) and fry it in a skillet over medium heat. Add cheese, shredded beef, and cook until crispy and melty. Fold and press.
Serve with consomé:
Ladle some of the broth into small bowls for dipping. Garnish tacos with chopped onions, cilantro, and a squeeze of lime.
