  • 4 cups seedless watermelon cut into bite-sized cubes (chilled for best results)
  • 1 cup crumbled feta cheese or block feta, cut into small cubes
  • ½ cup thinly sliced red onion optional, for a sharp bite
  • cup fresh mint leaves torn or thinly sliced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lime juice or lemon juice if preferred
  • 1 pinch kosher salt to taste
  • Freshly cracked black pepper to taste

Instructions
 

  • Prepare the watermelon (5 minutes): Cut into cubes or use a melon baller for a fun presentation.
  • Slice onions (2 minutes): Thinly slice red onion—soaking in cold water for 10 minutes helps mellow the sharpness.
  • Make the dressing (2 minutes): Whisk together olive oil, lime juice, a pinch of salt, and black pepper.
  • Assemble the salad (3 minutes): In a large bowl, gently combine watermelon, feta, red onion, and mint.
  • Toss with dressing (1 minute): Drizzle dressing over the top and toss lightly to coat.

Notes

  • Best served immediately to keep it fresh and crisp.
  • For less bite, soak sliced onions in cold water before adding.
