Ingredients
  

  • For the Filling
  • 2 tbsp olive oil — Helps soften the veggies and build flavor.
  • 1 medium sweet potato peeled and diced — Adds sweetness and creamy texture.
  • 1 red bell pepper diced — Bright flavor and color.
  • 1 small yellow onion diced — Aromatic base.
  • 2 cloves garlic minced — Always essential.
  • 1 can 15 oz black beans, drained and rinsed — For protein and heartiness.
  • 1 tsp ground cumin — Classic earthy flavor.
  • 1 tsp chili powder — For warmth not heat.
  • ½ tsp smoked paprika — Adds depth; optional but recommended.
  • ½ tsp salt adjust to taste
  • For the Sauce & Assembly
  • 2 cups red enchilada sauce or green enchilada sauce — Use your favorite brand or homemade.
  • 8–10 corn tortillas or flour tortillas — Corn gives classic flavor; flour is easier to roll.
  • 2 cups shredded cheese Monterey Jack, cheddar, or a blend — Melts beautifully.
  • ¼ cup chopped fresh cilantro — Bright finishing touch.
  • 1 lime cut into wedges — For serving.
  • Optional Garnishes
  • Sour cream or Greek yogurt
  • Sliced avocado
  • Extra cilantro
  • Cotija cheese
  • Pickled red onions

Instructions
 

  • Preheat & Prepare
  • Set your oven to 375°F. Lightly oil or spray your baking dishes so nothing sticks.
  • Sauté the Veggies
  • Heat olive oil in a large skillet over medium heat. Add onion, sweet potato, and bell pepper. Cook for 10–12 minutes, stirring occasionally, until the sweet potatoes begin to soften.
  • Tip: The sweet potato cubes should be tender enough to pierce with a fork but not mushy.
  • Add Garlic & Spices
  • Mix in garlic, cumin, chili powder, smoked paprika, and salt. Cook 1–2 minutes until fragrant.
  • (The smell will tell you when it's ready — honestly, the spices perfume the whole kitchen.)
  • Stir in the Black Beans
  • Add the black beans and mix until everything is evenly coated. Cook another 2–3 minutes.
  • This is also where I sneak a little taste. Quality control, right?
  • Warm the Tortillas
  • Corn tortillas can crack when cold. Wrap them in a damp paper towel and microwave for 25–30 seconds, or warm on a skillet.
  • Flour tortillas roll more easily but give a slightly different texture. Both work!
  • Assemble the Enchiladas
  • Spoon a thin layer of cup of the enchilada sauce on the bottom of your baking dishes.
  • Working one tortilla at a time:
  • Add a scoop of filling.
  • Sprinkle with a little cheese.
  • Roll tightly and place seam side down.
  • Repeat with all tortillas.
  • Add Sauce & Cheese
  • Pour the remaining enchilada sauce over the tortillas. Don’t drown them, but make sure each one has a nice coating.
  • Sprinkle with the remaining cheese.
  • Bake
  • Cover with foil and bake covered for 20 minutes.
  • Remove foil and bake an additional 10–15 minutes, or until the edges are bubbly and the cheese melts beautifully.
  • Serve & Enjoy
  • Top with cilantro, avocado, lime, or whatever you love.
  • This is the moment the whole dish comes together — melty, saucy, comforting, and absolutely irresistible.

Notes

  • Warm your tortillas first to prevent cracking, especially corn tortillas.
  • Don’t overfill the enchiladas or they may burst while baking.
  • Let the baked enchiladas rest for 5 minutes before serving to help them set.
  • You can assemble the dish up to 24 hours ahead and refrigerate before baking.
  • The recipe freezes well—freeze assembled but unbaked enchiladas for up to 3 months.
