Ingredients
  

  • For the Filling:
  • 1 lb thinly sliced ribeye steak or sirloin
  • 1 tablespoon olive oil
  • 1 small onion thinly sliced
  • 1 green bell pepper thinly sliced (optional)
  • Salt and black pepper to taste
  • For the Assembly:
  • 4 hoagie rolls or sub rolls
  • 4–6 slices provolone cheese or Cheez Whiz or American cheese
  • 1 tablespoon butter optional, for toasting rolls

Instructions
 

  • Prep the Steak (5 minutes)
  • If it’s not already sliced, freeze the ribeye for 30 minutes. Then use a sharp knife to slice it as thinly as possible—almost shaved.
  • Sauté the Onions and Peppers (8 minutes)
  • Heat olive oil in a large skillet over medium heat. Add the sliced onions and green bell peppers. Cook until soft and slightly caramelized, about 6–8 minutes. Remove from pan and set aside.
  • Cook the Steak (5–7 minutes)
  • In the same skillet, add a touch more oil if needed and toss in the sliced steak. Season with salt and black pepper. Cook over medium-high heat until browned, about 5–7 minutes. Stir frequently and break apart any clumps with a spatula.
  • Melt the Cheese (2 minutes)
  • Turn the heat to low. Layer slices of provolone or American cheese over the cooked steak. Cover the pan with a lid and let the cheese melt for 1–2 minutes until gooey and irresistible.
  • Toast the Rolls (Optional, 2 minutes)
  • If you like a crisp bite, lightly butter the hoagie rolls and toast them in a skillet for 1–2 minutes.
  • Assemble and Serve (2 minutes)
  • Spoon the cheesy steak mixture into the rolls. Pile it high and serve immediately while everything is hot and melty.

Notes

Tip: Ask your butcher to slice the steak thin or partially freeze the meat and slice it at home using a sharp knife.
