This creamy mango sticky rice recipe blends sticky rice, coconut milk sugar syrup, and fresh ripe mangoes for a delicious Thai-inspired dessert.

Ingredients
  

  • For the Sticky Rice
  • 1 cup glutinous rice also called sweet rice or sticky rice
  • cups water or enough to steam properly
  • Soak the rice for at least 1 hour or overnight for best results.
  • For the Coconut Sauce
  • 1 can 13.5 oz coconut milk
  • ½ cup sugar
  • ½ tsp salt
  • 2 tbsp coconut cream optional but adds richness
  • 1 tsp corn starch mixed with 1 tbsp water to thicken if needed
  • For Serving
  • 2–3 ripe mangoes sliced
  • Sesame seeds or toasted mung beans for garnish
  • Extra coconut cream optional

Instructions
 

  • Cook the Sticky Rice
  • Rinse 1 cup glutinous rice until the water is almost clear.
  • Soak for at least 1 hour (overnight is best).
  • Steam for 18–20 minutes until tender and shiny.
  • (Or cook in a rice cooker with 1 cup water.)
  • Make the Coconut Sauce
  • Heat 1 can coconut milk, ½ cup sugar, and ½ tsp salt over medium heat.
  • Stir until the sugar melts.
  • Add 2 tbsp coconut cream for extra richness.
  • (Optional) Thicken with 1 tsp cornstarch mixed with 1 tbsp water.
  • Mix the Rice With Sauce
  • Put the warm sticky rice in a bowl.
  • Pour about ¾ cup of the coconut sauce over it.
  • Gently stir and let it sit 10 minutes to absorb.
  • Prepare the Mangoes
  • Peel 2–3 ripe mangoes.
  • Slice or cube them.
  • Keep them at room temperature.
  • Serve
  • Add a scoop of coconut sticky rice to a plate.
  • Place mango slices beside it.
  • Drizzle extra coconut sauce on top.
  • Sprinkle with sesame seeds or toasted mung beans.

Notes

  • Soak the glutinous rice for at least 1 hour for the best texture.
  • Don’t boil sticky rice like regular rice — steam or cook gently.
  • Use ripe mangoes only for optimal sweetness and flavor.
  • Keep the heat medium when cooking coconut milk sugar syrup to avoid separation.
  • Let the rice rest after mixing with coconut sauce to absorb flavor fully.
  • Serve mangoes at room temperature for best texture and flavor.
  • Add extra coconut cream at the end for a richer glossy finish.
