- 2 English cucumbers or 5–6 Persian cucumbers sliced into thin rounds (about ¼-inch thick).

Slice the Cucumbers
Slice the cucumbers into thin, even rounds — about ¼-inch thick. You can use a sharp knife or mandoline for consistency. The thinner the slices, the more flavor they’ll absorb.
Salt the Cucumbers
Transfer the slices to a bowl and sprinkle with 1 teaspoon of salt. Toss gently and let sit for 10 minutes. This draws out excess moisture and keeps the salad crisp.

Make the Dressing
