Instructions
 

  • Melt the butter (2 minutes)
  • In a medium saucepan, melt butter over medium heat.
  • Don’t brown it – just let it fully melt and start to bubble.
  • Add garlic (1 minute)
  • Stir in the minced garlic and cook until fragrant, about 30–60 seconds.
  • Be careful not to burn it.
  • Pour in heavy cream (2 minutes)
  • Slowly add the cream, stirring constantly. Bring to a gentle simmer.
  • Melt in the cheese (3–4 minutes)
  • Lower heat to medium-low. Gradually whisk in Parmesan cheese.
  • Keep stirring until sauce is smooth, creamy, and thick enough to coat a spoon.
  • Season and serve (1 minute)
  • Add salt, pepper, and nutmeg (if using). Taste and adjust to your preference.
  • Toss with cooked pasta or use immediately.

Notes

  • Grate your own cheese. Pre-shredded cheese contains anti-caking agents that prevent it from melting smoothly.
