- For the Salad
- 1 15 oz can cannellini beans, drained and rinsed
- 1 15 oz can black beans, drained and rinsed
- 1 15 oz can chickpeas (garbanzo beans), drained and rinsed
- 1 15 oz can kidney beans, drained and rinsed
- 1 medium red onion finely diced
- 1 red bell pepper chopped
- 1 yellow bell pepper chopped
- 1 cup cherry tomatoes halved
- ½ cup fresh parsley chopped
- For the Dressing
- ⅓ cup extra virgin olive oil – rich and smooth base.
- ¼ cup red wine vinegar – tangy balance.
- 1 tbsp Dijon mustard – helps emulsify and adds flavor.
- 2 tsp honey or maple syrup – rounds out the acidity.
- 2 cloves garlic minced – don’t skimp here.
- 1 tsp dried oregano – classic Mediterranean note.
- Salt and pepper to taste
Drain and rinse beans (5 minutes):
Open all cans of beans, drain them, and rinse under cold water until the water runs clear. This removes excess sodium and improves flavor.
Chop the vegetables (10 minutes):
Dice the red onion and bell peppers. Halve the cherry tomatoes. Chop the parsley.
Whisk the dressing (3 minutes):
In a small bowl or jar, whisk together olive oil, vinegar, Dijon mustard, honey, garlic, oregano, salt, and pepper until smooth and emulsified.
Combine everything (2 minutes):
In a large bowl, add the beans, vegetables, and parsley. Pour the dressing on top.
Mix and chill:
Toss gently until everything is evenly coated. Cover and refrigerate for at least 30 minutes before serving—this allows the flavors to meld.
