Ingredients

  • For the Meatballs Homemade Version
  • 1 pound ground beef – Use 80/20 for the perfect balance of flavor and juiciness.
  • 1/2 pound ground pork – Adds richness and tenderness.
  • 1/2 cup breadcrumbs – Helps bind the mixture and keep it soft.
  • 1/4 cup milk – Moistens the breadcrumbs for extra tenderness.
  • 1 egg – Holds everything together.
  • 2 garlic cloves minced – Adds deep flavor.
  • 1/4 cup grated Parmesan cheese – Adds savory umami.
  • 1 tablespoon fresh parsley chopped – Optional but brightens the flavor.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Short on time? Skip this step and use one 32-ounce bag of frozen meatballs — just as delicious when cooked low and slow in sauce.
  • For the Sauce
  • 1 28-ounce can crushed tomatoes – The heart of the sauce.
  • 1 15-ounce can tomato sauce – Adds smooth body and consistency.
  • 3 tablespoons tomato paste – Deepens the flavor and color.
  • 1 medium onion finely diced – Adds sweetness as it cooks.
  • 3 garlic cloves minced – Garlic makes everything better.
  • 1 tablespoon olive oil – Helps blend and carry the flavors.
  • 1 tablespoon Italian seasoning – Classic herbs for that homestyle taste.
  • 1 teaspoon sugar – Balances acidity from the tomatoes.
  • Salt and pepper to taste
  • Optional Add-Ons
  • 1/2 teaspoon red pepper flakes – For a touch of heat.
  • 1/4 cup red wine – Adds beautiful depth and richness.
  • 1/4 cup Parmesan cheese – Stir into the sauce before serving.
  • Fresh basil or parsley – For garnish.

Instructions

  • Mix the Meatballs
  • In a large mixing bowl, combine ground beef, pork, breadcrumbs, milk, egg, garlic, Parmesan, parsley, salt, and pepper. Use your hands or a wooden spoon to gently mix until just combined — overmixing can make the meatballs tough.
  • Form the Meatballs
  • Roll the mixture into 1½-inch balls (about golf ball size). Place them on a parchment-lined baking sheet.
  • Brown the Meatballs (Optional but Recommended)
  • Heat a skillet over medium heat and add a drizzle of olive oil. Brown the meatballs on all sides for about 1–2 minutes per side.
  • If you’re using frozen meatballs, skip this step and go straight to the crockpot.
  • Layer in the Crockpot
  • Add the diced onions and minced garlic to the bottom of your slow cooker. Then layer in the meatballs, followed by the crushed tomatoes, tomato sauce, tomato paste, Italian seasoning, olive oil, sugar, and a pinch of salt and pepper.
  • Give it a gentle stir so the sauce is evenly distributed over the meatballs.
  • Cook on Low and Slow
  • Cover the crockpot and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the meatballs are tender and cooked through.
  • You’ll know they’re done when the sauce is thick, rich, and the meatballs are juicy enough to cut with a spoon.
  • Finish and Serve
  • Before serving, stir in a handful of fresh parsley or basil, and taste for seasoning.
  • Serve the meatballs straight from the crockpot with pasta, mashed potatoes, or even tucked inside crusty rolls for the best meatball subs you’ve ever had.

Notes

  • Don’t overmix the meat. Gentle mixing keeps the texture tender, not rubbery.
  • Use a mix of beef and pork. It’s the secret to juicy, flavorful meatballs.
  • Brown for extra flavor. It’s optional, but adds a beautiful depth to the sauce.
  • Avoid overcooking. Even in a crockpot, too long on HIGH can dry them out.
  • Taste before serving. A pinch of salt or squeeze of lemon can elevate the sauce instantly.
