Instructions
 

  • Preheat oven – Set your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • Mix wet ingredients – In a large bowl, combine melted butter, sour cream, and eggs. Stir until smooth.
  • Add corn – Fold in the drained corn and creamed corn.
  • Add cornbread mix – Stir in the Jiffy mix until just combined. Don’t overmix—it should be a little lumpy.
  • Cheese it up – Fold in shredded cheddar cheese, if using.
  • Bake – Pour the batter into the prepared dish and bake for 40–50 minutes, or until golden brown on top and set in the center.
  • Cool slightly – Let the casserole rest for 5–10 minutes before serving. This helps it set up perfectly.
