  • 1/2 tsp garlic powder – Boosts flavor without chopping garlic.
  • 1/4 tsp cayenne pepper optional – For a kick.
  • 1 tsp salt + 1/2 tsp black pepper – Adjust to taste.
  • Fresh parsley or cilantro – Brightens up the dish.
  • Lemon wedges – A squeeze of citrus at the end makes everything pop.

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prep chickpeas. Drain and rinse canned chickpeas. Pat them dry with paper towels—removing excess moisture helps them crisp.
  • Season. In a large bowl, toss chickpeas, sweet potato cubes, and onion slices with olive oil, paprika, cumin, garlic powder, cayenne, salt, and black pepper.
  • Roast. Spread mixture evenly on the baking sheet. Roast for 25–30 minutes, stirring halfway, until sweet potatoes are tender and chickpeas are golden brown and slightly crisp.
  • Serve. Transfer to a serving bowl, top with fresh herbs, and finish with a squeeze of lemon juice.
