Instructions
 

  • Soak the Peas (Optional but Recommended)
  • Place the dry black eyed peas in a large bowl and cover with water by 2 inches. Let them soak overnight (6–8 hours) or use a quick soak method by boiling for 2 minutes, then letting them rest for 1 hour.
  • Sauté the Veggies
  • In a large pot or Dutch oven, heat olive oil over medium heat. Add onions, bell peppers, and celery, cooking until softened—about 5 minutes. Stir in the garlic and cook another minute until fragrant.
  • Add the Smoked Meat & Spices
  • Nestle the ham hock (or smoked turkey) into the pot. Sprinkle in onion powder, black pepper, paprika, and bay leaves. Stir gently to coat the veggies and meat in those seasonings—it’ll smell incredible already.
  • Add the Peas & Broth
  • Drain and rinse the soaked black eyed peas, then add them to the pot. Pour in chicken broth, ensuring everything is submerged.
  • Bring the mixture to a boil, then reduce the heat to medium-low and cover partially. Simmer for 1 hour, stirring occasionally.
  • Check for Tenderness
  • After about an hour, check if the peas are tender. They should be creamy but not mushy. If still firm, continue cooking for another 15–20 minutes.
  • Once done, remove the ham hock or turkey leg, shred any meat, and return it to the pot.
  • Adjust Seasoning & Add Greens (Optional)
  • If using collard greens, add them during the last 10 minutes of cooking. Finish with a splash of apple cider vinegar and season with salt to taste.

Notes

  • Don’t oversalt early. The smoked meat and broth add plenty of salt, so season at the end.
  • Simmer, don’t boil. Gentle heat keeps the peas creamy, not split or dry.

  • Add acid last. Vinegar or lemon juice enhances flavor but can toughen peas if added too early.

  • Reheat: Gently warm over medium heat, adding a splash of broth if needed.
